I am so proud to tell you more about this Spelt Whole Wheat Bundt Chocolate Cake. It was absolutely delicious, easy to make, sweet yet without any sugar. 

I think I fell in love with looking for alternatives for sweetening desserts. I love experimenting with different ingredients, in order to create healthier recipes, we can enjoy more freely. And this Bundt Chocolate cake with the whole wheat spelt flour is not an exception. It’s an excellent choice for Sundays or any other day during the week. 

I am reading a lot these days about natural sweeteners. What nutrients they have, why they are better from using sugar. Recipe for the Whole Wheat Bundt Chocolate Marble Cake

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 4 eggs
  • 190 g dry dates
  • 70 g rice syrup
  • 165 g plant-based milk
  • 70 g extra virgin olive oil
  • 1 lemon zest (biological)
  • 30 g cocoa powder
  • 160 g whole wheat spelt flour
  • 1,5 tsp baking powder

Instructions

  1. Preheat oven to 180 degrees. 
  2. Grease well the bundt pan and powder it well with the whole wheat flour. It serves to prevent the cake from sticking. 
  3. Boil some water in a kettle and pour the water over dry dates in a small bowl, let it soak for about 15 minutes. 
  4. Place dry dates (pitted)  into a food processor, add a few spoons of milk and blend it until smooth.
  5. By using a hand mixer, beat 4 whole eggs into a perfect airy foam. Add milk, oil, dates and rice syrup and continue beating (at minimum speed) until all well combined.
  6. Add the whole wheat spelt flour, baking powder. Incorporate it well and gently into the batter by using a large spatula – fold from the bottom up to the sides. Do not stir or mix the batter quickly and do not over-work it.
  7. Then, pour half of the batter into another bowl. Into first bowl, stir in the lemon zest, in the second bowl: incorporate chocolate powder into the batter.
  8. Then, pour a little bit of chocolate batter into the bundt pan, then add on top light batter, then chocolate and on top light batter again. (see the image below)
  9. Bake it in oven for 180 degrees for the 30 minutes, then lower the heat to 165 degree for other 20 minutes.. Then, remove them from oven and put aside to cool down to a room temperature. 

Topping: you can use or a chocolate powder, or melt about 120 g dark chocolate with 2 tbsp coconut butter.
