Veggie Crepes with Garlic Cream Cheese – gluten-free & vegetarian

These veggie crepes with garlic cream cheese are great option for any dinner. This recipe is gluten-free and very easy to make. Cream is made with roasted garlic, fresh thyme and cream cheese. If you do not want to roast the garlic, add a fresh one. Crepes are made with chickpea and buckwheat flour and are gluten-free, dairy-free (using plant-based milk) and vegetarian.

Recipe for these Veggie Crepes with Garlic Cream Cheese

Ingredients

  • For crepes:
  • 500 ml plant based milk
  • 1 egg
  • 70 g chickpea flour
  • 77 g buckwheat flour
  • 1 tsp salt
  • .
  • For the garlic cream cheese
  • 250 g Philadelphia or other cream cheese
  • about 4-7 garlic cloves (I prefer roasted, but you can add fresh too) (add as many garlic cloves as you like)
  • about 1 tbsp of fresh thyme
  • 3 tbsp of extra virgin olive oil
  • 0,5 tsp of salt (or as much as preferred)
  • .
  • Vegetables:
  • avocado, cleaned & sliced
  • raw red cabbage, cut
  • zucchini, raw and sliced
  • any other you wish
  • .
  • Optional:
  • seeds or nuts

Instructions

  1. Do this step if you want to roast the garlic: Preheat oven to 180 degrees. Cut the garlic head in half and place both halves on a baking pan. Add a bit of water on the bottom, to avoid garlic sticking to the pan. Roast in oven for about 20 minutes or until golden grown on top.
  2. In the meantime, prepare crepes. By using a whisk, combine well all ingredients (milk, egg, chickpea & buckwheat flour and salt).
  3. Heat a frying pan with a little bit of oil. Pour a small amount of the batter on a frying pan, let it spread over the pan, and cook from both sides until golden/brown colour. Put aside.
  4. Once, the garlic is roasted, clean all garlic cloves and put some into a food processor. Add cream cheese, fresh thyme, salt and olive oil. Blend all until smooth. Adjust garlic/salt as preferred.
  5. Fill your crepes with garlic creme and place fresh veggies on top. Eventually, you can add also some seeds or nuts for a better nutritional value.

Notes

This recipe is gluten-free and vegetarian. For lactose-free option, use lactose-free cheese.
