Vegetarian Tomato & Feta Pie – 100% whole-grain

If you have never made tomato & feta pie, you don’t know what you miss. The dough is 100% wholegrain, made with rye and spelt flour, and I filled this pie with fresh tomatoes, feta and fresh basil. I recommend using sweeter tomatoes, they will match perfectly with feta cheese.

The dough I made for this pie is from my pizza recipe. However, I used half of the ingredients, as it’s perfectly enough for one pie of 25-30 cm diameter.

Recipe for this Tomato & Feta Pie

Vegetarian wholegrain Tomato & Feta Pie

If you have never made tomato & feta pie, you don’t know what you miss. The dough is 100% wholegrain, made with… All Recipes Vegetarian Tomato & Feta Pie – 100% whole-grain European Print
Serves: 4-5 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat


  • 150 g whole wheat rye flour
  • 7 g honey
  • 4 g dry yeast
  • 200 ml warm water
  • 150 g whole spelt flour
  • 23 g extra virgin olive oil
  • 7 g salt
  • 25 g warm water
  • 5-6 large tomatoes
  • a hand of fresh basil
  • 1 feta (200g)


  1. Prepare the dough according to the instructions from my pizza recipe. If you follow these exact ingredients, you should get a perfect dough. You can use a kitchen robot or you can use hands to knead the dough. Follow that recipe until the point 12. Then continue as written here:
  2. When the dough rises into double of its amount, place the dough on a flowered working surface. Create a ball and let it rise for 15 minutes. 
  3. In the meantime, slice tomatoes and cut feta in small cubes and preheat the oven for 180 degrees celsius. 
  4. Then, use the dough roller and roll it into a round shape, making it tall about 0,5 cm. Make the dough larger in diameter than your baking pan is. 
  5. Grease the baking pan, mine was 25 cm diameter, and move the dough into the pan. Press it slightly to the sides.
  6. Fill the pan with sliced tomatoes, feta and fresh basil. You can cut the extra dough or cover the edges of tomatoes (this is what I did in the images).
  7. Bake in oven for 30 minutes at 180° celsius, then lower the heat to 165° and bake it other 20 minutes. 

Tips for what you can do with the extra dough: it's super yummy if you fry it on a bit of olive oil; or you can make mini tomato pies.


This pie is made with fresh tomatoes & feta, it's 100% wholegrain.
