The best Gluten-free Cinnamon Apple Bread from Chickpea Flour

What you imagine, when you think about Autumn? For me it’s apples and cinnamon. I love when the smell of freshly baked cake spread in the whole house. Recently, I have been thinking of how to transform my favourite traditional recipe into something healthier and more nutrient. So after some experiments and tests, this cake was born. Lactose-free & Gluten-free Cinnamon Apple Bread, made from chickpea flour.

The taste of this cake is delicious and original, thanks to the chickpea flour. This bread is perfect for breakfast or as a snack. It matches perfectly with morning coffee, gives you a lot of energy for the whole morning and satiate you enough.

You can make this cake in two different ways – grate apples or cut them. When you grate them, the cake will be more moist, as the apples will get cooked completely. In this recipe I cut apples in small pieces.

Recipe for Gluten-free Cinnamon Apple Bread

Recently, I have been thinking of how to transform my favourite traditional recipe into something healthier and more nutrient. So after some experiments and tests, this cake was born. Nutrition facts: 200 calories 20 grams fat

Ingredients

  • about 2 medium size apples, peeled and chopped
  • 2 eggs
  • 70 g raw cane sugar
  • 100 ml soy/rice milk
  • 35 g sunflower seeds oil or coconut oil
  • 2 tbsp apple vinegar
  • 60 g buckwheat flour
  • 100 g chickpea flour
  • 2 tsp baking powder
  • 0,5 tsp cardamon powder
  • 0,5 tsp cinnamon powder

Instructions

  1. Turn on the oven for 180 degrees and grease the baking pan.
  2. By using a hand mixer, beat 2 whole eggs into a perfect airy foam. Add sugar and continue beating until sugar melts. It might take 2-3 minutes. 
  3. Add milk, oil, vanilla, apple vinegar and mix it well by using a hand mixer.
  4. Through a sieve, add chickpea flour. Add also the buckwheat flour, baking powder, cinnamon and cardamon powder. Incorporate it well and gently into the batter by using a large spatula – fold from the bottom up to the sides. Do not stir or mix the batter quickly and do not over-work it, otherwise it will not rise well while baking.
  5. Stir in the chopped apples.
  6. Pour the batter into the baking pan. Bake it in oven for 180 degrees for the first 20 minutes, then lower the temperature to 165 degrees for other 15 minutes or until the cake is baked. Then, remove it from oven and put aside to cool down to reach a room temperature.

Notes

The recipe is gluten-free, vegetarian, lactose-free and made from chickpea flour.
