Morning is important part of the day and therefore you should start it right and positively. If you are a lover of sweet breakfast, this gluten-free and vegan plum mug cake is definitely a great starter of the day. It’s light, without any flour or sugar added. Only naturally sweetened. The combination of banana, walnuts and chickpea flour results in a delicious cream and matches perfectly with the taste of plums. It’s nutrient, healthy and gives you enough energy for all morning. The recipe is gluten-free, vegan, lactose-free and it’s so easy to prepare.

As there is no flour, egg or starch in the filling, I recommend to get small baking cups in which you can bake the cake but also eat it from as well. These cakes are great for breakfast, or as a dessert for your friends or family.

Recipe for plum cakes with cinnamon

If you are a lover of sweet breakfast, this gluten-free and vegan plum mug cake is definitely a great starter of the day. It's light, without any flour or sugar added. Recipes Mug cakes with plums and cinnamon – gluten-free and vegan European Print

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 70 g walnuts
  • 70g dry dates, pitted
  • 1 ripe banana
  • 40 g coconut oil
  • 200 g milk
  • 60 g chickpea flour
  • 1 tsp apple winegare
  • 0,5 tsp baking powder
  • pinch of salt
  • 1/4 tsp cardamon powder
  • 1/2 tsp cinnamon powder
  • 5 or 6 plums cut in pieces

Instructions

  1. In a food processor, blend together dates with walnuts until you read blended sticky consitency.
  2. In another bowl, mash banana with a fork until a pudding consitency, add milk, coconut oil, blended walnut/dates and combine all well by using a whisk. The batter should become creamy.
  3. Add chickpea flour, pinch of salt, baking powder and apple winegar, nutmeg and cinnamon. Combine it well together.
  4. Pour the batter into baking cups to the half of its size. Place plums on top. 
  5. Bake in oven for 10 minutes at 180 degrees, then lower for 165 degrees for other 15 minutes.
