Ingredients

  • about 150 g of fresh ginger, peeled and grated
  • 1 tbsp of cloves
  • 2 small cinnamon sticks (of about 5 cm long)
  • 1 l water
  • 2 tbsp of honey (or other natural sweetener)
  • 1 fresh juice of squeezed lemon

Instructions

  1. Peel the ginger and grate it into a medium size saucepan. Add 1 little of water, cinnamon and cloves and bring it to a boil. Then, lower the heat and let it simmer for 10 minutes.
  2. Take it off the heat and put aside. Let it cool a little bit, so the syrup has almost a room temperature.
  3. Pour it through a sieve into a glass jar, to divide the liquid part from the rest of ginger - that you can throw away.
  4. Add honey and lemon (adjust as you prefer) and stir it well, that honey melts.
  5. Let it settle for at least 1 hour, you will see how the syrup gets transparent on top (image on the right). If you prefer, you can pour the transparent part into a separate bottle.
