Mushroom Quinoa with White Wine and Parmesan

Have you ever tried to prepare “risotto”, using quinoa instead of rice? This Mushroom Quinoa recipe is vegetarian, gluten-free & lactose-free. Great for lunch or dinner, and super practical to take to your work too. You can serve it with a glass of white wine, some extra parmesan and parsley.

Recipe for Mushroom Quinoa Risotto with White Wine and Parmesan

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 250 g Black Quinoa (or 1,5 cup)
  • 800 ml broth (or 3 cups)
  • 1 onion
  • 250 g mushrooms
  • 100 ml white wine
  • a hand of grated parmesan (or about 60 grams)
  • some parsley
  • salt

Instructions

  1. Chop onion and mushrooms. Heat a little bit of olive oil in a cooking pot and sauté onion until golden. 
  2. Add mushrooms, lower the heat to minimum and stir it from time to time, until mushrooms are cooked.
  3. Add quinoa and wine. Increase the heat to medium and let it simmer for about 2-3 minutes, or until wine evaporates. 
  4. Add broth & salt, stir it well and bring it to a boil. 
  5. As soon as it start boiling, lower the heat to minimum and let it simmer until quinoa is cooked. Pay attention to not let quinoa dry completely and absorb all water. It's absolutely fine to switch off the heat, even if there is still some broth in the pot. Important is just that quinoa is cooked. After you add parmesan, the broth left will turn into a sauce. 
  6. After the heat is off, add grated parmesan and some chopped fresh parsley. Stir it well so the parmesan gets melted. 
  7. You can serve it with a glass of white wine, with some extra grated parmesan.
