Ideal Autumn Gluten-free Apple pie with Cinnamon, walnuts, ginger and chickpea flour

It’s an apple season! I love any kind of gluten-free apple pie and in the past I have tried so many different recipes. Recently I have been thinking how to make my favourite pie even more nutrient and healthier. Once I was experimenting with chickpea flour and it turned out just great. You have never tried it? Well, you would be very surprised how easy is to use chickpea flour also for preparing desserts. It has a lot of nutrients, protein, and is also gluten-free. Thanks to grated apples, this cake is super moist.

This recipe is gluten-free, diary-free, vegetarian and very nutrient. You can make it for breakfast or morning snack. It’s very easy to prepare it also during the weekend for the family. And the combination of apples with cinnamon and ginger makes it perfect for these autumn days.

Super-moist thanks to the apples

I love baking with apples, because you can make every cake different, based on how you cut them. More you cut or grate the apples and add them into the batter, more moist the cake will be. Grated apples will just melt while baking and they make the cake so juicy and most. I also prefer to peel them before grating but this is up to you.

Then I put some extra apples on top. I peeled them, cut in half and sliced them, placed them on the top of the cake and baked it.

You can also adjust spices as you wish. If you do not like ginger in the cakes, just skip it. This is the same for walnuts. If you are alergic to dry nuts, do not use them. The cake will be anyway very delicious.

Recipe for the Apple pie with walnuts and chickpea flour

Nutrition facts: 200 calories 20 grams fat


  • 2 eggs
  • 1 apple (about 180 g) - peel and grate
  • 2 apples - peel, cut in half and then cut into slices
  • 100 g sugar
  • 150 ml plant based milk
  • 35 g plant based oil
  • 1,5 tsp apple vinegar
  • 65 g chickpea flour
  • 120 g buckwheat flour
  • 1,5 tsp baking powder
  • 0,5 tsp cinnamon
  • 1/4 tsp cardamon and ginger powder
  • 50 g chopped walnuts


  1. Turn on the oven for 180 degrees and grease the baking pan. (I used the one of 22 cm diameter)
  2. By using a hand mixer, beat 2 whole eggs into a perfect airy foam. Add sugar and continue beating until sugar melts. It might take 2-3 minutes. 
  3. Add milk, oil, apple vinegar and mix it well by using a hand mixer.
  4. Add grated apples and chopped walnuts. Through a sieve, add chickpea and buckwheat flour, baking powder, cinnamon, cardamon and ginger powder. Incorporate it well and gently into the batter by using a large spatula – fold from the bottom up to the sides. Do not stir or mix the batter quickly and do not over-work it, otherwise it will not rise well while baking.
  5. Pour the batter into the baking pan and place on the top the apples cut in half, as you see on the picture above. Bake it in oven for 180 degrees for the first15 minutes, then lower the temperature to 165 degrees for other 20 minutes or until the cake is baked through. Then, remove it from oven and put aside to cool down to a room temperature.
