Gluten-free Flatbreads with Chickpea & Buckwheat – PART 2 + Video Recipe!

Did you like my previsous blog post about 3 secrets for a perfect hummus? I discovered these little tricks by coincidence, having a roasted chickpea from the previous day, so I tried to make a hummus out of it. And it turned absolutely delicious. And, today, I am so excited to share with you the recipe for these gluten-free flatbreads from chickpea and buckwheat flour. They are made only from 4 ingredients, and they are also very easy to prepare.

You can serve them with hummus, they work perfectly together. These flatbreads however are the best, when eaten still warm and fresh, straight from a pan. When I made these flatbreads with hummus, I invited my friends for dinner. I wanted to test this recipe and hear what they say about it. And, I have never seen something disappearing from the table so quickly, they just loved it!

As I mentioned before, it’s ideal to eat them still warm. They are crunchy but soft and delicious. So, when you have guests for dinner and you want to make these flatbreads, prepare everything before, put aside and then cook them when your guests are sitting at the table. They take just 10 minutes to cook, so it’s very quick.

Secret ingredient for these gluten-free flatbreads

My secret ingredient is white wine. Oh yes! Using wine in the kitchen makes such a difference! I just love cooking with wine. Red or white. Wine is basic ingredient in my kitchen for risotto, sauce, meat or these flat-breads. White wine, was THE INGREDIENT that made the difference in this recipe. So if you will try to skip this ingredient, it will not be the same.

These flat-breads are gluten-free, nutrient and rich in protein and minerals, as they are made with chickpea flour.

The preparation is so easy and you need only 4 ingredients, 1 frying pan and an extra vergine olive oil. Then, they are made in a few minutes.

Gluten-free flatbreads with buckwheat and chickpea flour

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 150 ml white wine
  • 120 g chickpea flour
  • 50 g + 20g buckwheat flour
  • 1 tsp of salt
  • some extra buckwheat flour for working with the dough

Instructions

    • in a small bowl, combine together the wine, salt, chickpea flour and 50g of buckwheat flour, then add 20g of buckwheat flour, and by using a fork or hands form a dough. 
    • Place the dough out from the bowl on a working surface, powdered by the buckwheat flour. Gently, using your hands, shape the dough into a long loaf of about 28 cm.
    • Slice a 2 cm-sized pieces with a sharp knife or a bench scrapper.
    • By using your hands, form each piece gently into a round/oval shape. The smaller the size of the flatbread, the better is. These flatbreads are about 8-9 cm in diameter.
    • Heat a frying pan over the medium heat, add a few drops of oil. Place the flatbreads on the pan, and leave it on a medium heat until brown (about 8 minutes one side). Check the flatbreads from time to time to avoid burning.
    • Then, turn to the other side and cook other 2 minutes. 
    • Serve still hot together with hummus and vegetables. 

 

Notes

The recipe is gluten-free, very easy and quick to make.
