Have you ever heard about Farinata? It’s typical Italian dish from Piedmont/Liguria region of Italy. I love this dish so much, and I have already written one recipe on my blog about it. However, today I will show you even better variation of this dish – the best gluten-free and vegan onion & chickpea farinata I have ever prepared.

This farinata is made only from 5 ingredients, the main one is a chickpea flour. This recipe is so easy to make, really. You just combine all ingredients together and set aside for some time. Then you just bake it. As its made from chickpea flour, it’s so nutrient and protein-rich. By baking it at the high temperature, its crunchy from outside but soft inside.

I love preparing it for dinner, or lunch over the weekends. It’s light, keeping you satiated for a long time and gives you enough energy. And it’s just perfect balance dish with a combination of green salad or raw vegetables.

Ingredients

  • 500 ml water
  • 1 tsp salt
  • 25 g extra virgin olive oil
  • 150 g of chickpea flour
  • 3 small onions (or as much as you prefer), cleaned and cut in circles

Instructions

  1. In a bowl, combine well by using a whisk all ingredients. Leave it in a fridge for 4 hours, if you are in a hurry, 30 minutes is ok. (however longer is better). Mix it from time to time. If you set aside the batter for more hours, take it out from fridge at least 20 minutes before baking, to reach a room temperature. 
  2. After, turn on the oven for maximum, mine is about 210 degrees (ventilation plus girl top/down option).
  3. Grease your pan or put a parchment paper on the bottom.
  4. Place onions on the bottom of the baking pan.
  5. Take the batter and mix it well again with a whisk. Pour the batter over the onions and bake it in oven for 25-30 minutes. The batter should be high about 0,7/1 cm, so get a pan that is large enough.
  6. Please, watch your farinata to avoid burning, after 25-30 minutes if the top turns golden, change settings on your oven for a grill option and bake it other 5 minutes. After, it's time to take it out.

Notes

I use a round pan of 32 cm diameter. If you don't have such, please, use some pan which is large enough, as farinata should be high from 0,7 mm to 1 cm.
