Creamy Garlic Soup – Gluten-free, Grain-free, Vegan & Dairy-free option

This soup is super creamy and is very easy to prepare. You need a few ingredients and if you love garlic, this is something to consider for your next dinner. This creamy garlic soup is gluten-free and grain-free. I added toma cheese & parmesan at the end, but if you want to keep it vegan or dairy-free, it’s really tasty without any cheese too.

Creamy Garlic Soup recipe

Ingredients

  • 1 garlic head
  • 1 onion
  • a bit of olive oil
  • 1 mid-size leek
  • 3 mid-size celery stalks
  • 4 middle size potatoes
  • 1 litter of broth
  • salt
  • optional: cheese of your choice, I used about 150 g of toma cheese and some extra grated parmesan
  • optional: bread crumbs

Instructions

  1. clean the garlic head and onion
  2. chop the onion and sautè (add a bit of olive oil) it together with the cleaned garlic cloves in a medium size pot, over the small heat, until the onion gets soft and golden. Stir it from time to time to avoid burning.
  3. In the meantime, clean and cut the leek, celery stalks and potatoes. Add them into the pot, and sautè all together for about other 3-5 minutes. 
  4. Add the broth, salt it (if needed), and bring it to a boil. Lower the heat to minimum and let it simmer until potatoes are soft. 
  5. Switch off the heat.
  6. By a ladle, take away some liquid/sauce from the pot (I usually take away about 1 full cup). You will use it to regulate the density of the soup later. 
  7. After, blend the soup by a hand blender until completely smooth and creamy. Now, if needed, you can adjust the density as you prefer, by adding that sauce back into the soup. If you get the rest of the sauce not used, I keep it in a fridge for a few days and use it for another soup or risotto.
  8. Optional: You can add cheese into this soup, it works perfectly together with the garlic. Cut the cheese into small cubes, and add it into the soup. Use a whisk, keep stirring until the cheese completely melts. When you add the cheese, you shouldn't boil the soup after. You can serve it straight away with some bread crumbs and extra cheese on top.
