Because we are staying at home this period, nobody said we can’t enjoy it the best way possible. Let me tell you more about this Chocolate, Orange & Hazelnuts Cheesecake. It’s raw, sugar-free, gluten-free, grain-free and with minimum and super basic ingredients.

I literally can’t stop eating it. The recipe turned out much better than expected. The cream is so soft, chocolate base matches perfectly with the orange sauce and the best fact is that this cheesecake is completely sugar-free. I didn’t even use any syrup or honey, everything is sweetened with dry dates. It’s a raw cake, all you need is just a food processor and 6 ingredients.

This recipe is made for 2 or 3 glasses (portions). If you wish to prepare it for more people, multiply all ingredients.

Recipe for this Raw Chocolate, Orange & Hazelnuts Cheesecake

Ingredients

  • 2 oranges
  • 250 g (1) philadelphia cheese
  • 100 g dry dates, pitted - soaked in a hot water for about 10 minutes
  • 50 g of hazelnuts
  • 5 dry dates extra - not soaked
  • 2,5 tsp cocoa powder
  • 1 tbsp (20g) of coconut oil (can be solid too)

Instructions

  1. soak 100 g of dates in a hot water for about 10 minutes. After, pour the water away. 
  2. Peel one orange, divide into separate pieces, take out the seeds from inside and place it in a food processor. Add 5 soaked dates and blend all together until completely smooth and creamy. Put aside in a fridge and clean the food processor.
  3. Place the rest of soaked dates into a food processor, add a juice of half orange and blend it together. Then, add cream cheese, the juice of the second half of orange and blend until smooth and creamy. Put the cream into a separate bowl, clean the food processor. 
  4. into the food processor, put hazelnuts (they do not need to be roasted), 5 dry dates (not soaked), 2,5 tsp of cocoa powder and 1 tbsp or 20 grams of solid coconut oil. Blend all together. 
  5. Now, put these layers together: place in glasses: first, hazelnut/chocolate layer, then cream cheese layer, then orange sauce, then cream again, then orange sauce and repeat until you finish all. On the top, place some chopped hazelnuts, some chopped dark chocolate and you can decorate it with orange (as on the pictures). (I used a dry orange slice)

The amounts of ingredients are for 2 max.3 portions. If you wish to make e.g. for 6 people, multiply (x2) all ingredients.

Notes

If you do not have hazelnuts, you can use almonds or walnuts, or any other nuts you have at home. This recipe is gluten-free, sugar-free (fruit/naturally sweetened), grain-free, raw. For a lactose-free option, buy a lactose-free philadelphia or you can use plant-based yogurt too. It's super easy, you can eat it immediately after you prepare it. I strongly recommend to put it into glasses, the cream is very soft.
