Artificial lighting doesn't have to be so complicated as we think. The resources below will help you understand its concept better and it will help find the right artificial light for you.

practice to create soft/hard light first

Take off your softbox (if you have one) and use the diffuser, instead of the softbox. Position your diffuser next to your scene, and direct your light into the diffuser. Then, play with the distance of the artificial light from the diffuser and keep observing your scene.

By changing the distance of the artificial light from the diffuser, the softness of the light will change too. Observe in detail how the light changes and what kind of shadows it creates. 

practice to increase bright & moody shots

The first step is important to learn, how to create softer or harder light with the artificial lighting. Use the same principle of playing with the distance of the artificial light from the diffuser, and prepare a couple of extra white & black cards. 

Work with the same scene, play with the intensity of the light, keep changing the distance of the light from the diffuser, and at the same time, use white cards to reflect the light back onto your scene (to make the scene brighter), or use black cards to make the shadows darker. 

Take your time to observe all this, and notice how your scene changes. This will help you understand how to use your artificial light to create the mood you want.

If you are thinking of getting an artificial light, it's important to decide if you want to buy continuous lighting or a flash. If you work in your studio only, continuous light is super comfortable to have! It's very easy to work with - you switch it on, lower / increase the intensity and that's it!

If you, however, want to work with restaurants, or on location, you need something that is smaller, practical & light to carry, and strong enough to overpower the natural light. In this case, you need a flash.
